Eunice was born in Avoca, Nebraska, to Frank and Winifred Staack on October 30, 1923. She married, and moved to San Diego, California in 1943.
She remained in California, retiring from the Southern California Gas Co. and then pursuing new careers in real estate and as a minister in the Church of Religious Science, from which she also retired.
She was active in Toastmaster's International, the Emblem Club, the National Federation of Republican Women and was a volunteer with the Elks Club. She had many hobbies and interests and enjoyed extensive travel.
