Katherine was born in Hussenbach (now called Linevo), Volgograd, Russia. Her parents were George Jacob and Mary Katherine (nee Propp) Leis. She married Heinrich Schaefer. They immigrated to Winnipeg in 1902. They moved to Rhein some time between 1913 and 1915. Heinrich and Katherine had at least 11 children, including: George, Mary, Molly, Henry, Jacob, Lydia, Martha, Theresa, John, Alex, and David. George and David became Lutheran pastors.
Heinrich passed away in 1922. On Dec. 3, 1923, Katherine married John George Mehling, a widower with two children. George and Katherine had 4 children together.
